Asheville, N.C. – Sept. 25, 2019 – Josh Moore, of Volare Italian Ristorante, Louisville, Ky., was named Chef of the Year by the Certified Angus Beef ® brand. The award was presented at the brand’s Annual Conference, held Sept. 23-25, in Asheville, N.C. Brand partners at the conference, including meat processors, distributors, chefs, retailers and cattle ranchers, explored merchandising and marketing solutions to satisfy growing consumer demand for great-tasting beef.
Moore is executive chef and managing partner of the fine-dining Italian restaurant, where dinner only is served seven days a week. The menu features house-made pastas and pastries, local produce, seafood and steaks. “We kind of offer a little bit for everyone,” Moore says. “We have a big emphasis on our Certified Angus Beef ® program.”
Moore started cooking as a youngster, learning from his grandmothers at home. He has since cooked in restaurant kitchens and come to appreciate the importance of starting with the best products. He has served Certified Angus Beef ® brand steaks on the menu since first being introduced to the brand in 2009. The New York strip steaks are top sellers, a favorite of restaurant guests and for parties in the restaurant’s back dining room.
“I was amazed by the consistency of the Certified Angus Beef ® brand steaks,” he says. “I’ve had the opportunity to meet a lot of those farmers across the country and it’s great to be part of that, just learning more about the science behind the beef. I can talk about the brand all day.”
Farming is also part of Moore’s role with the restaurant. He and his wife, Lindsay, own a small farm and provide produce for the restaurant. “It has grown in 14 years from a dozen tomato plants to almost three acres of produce and it’s been a very big thing for the success of the restaurant,” he says. They are raising 60 varieties of heirloom tomatoes and more than 1,300 plants this year.
“I’ve always been one that enjoys going out in the dining room and talking with guests and interacting with people,” Moore says. “If I come out to talk about the menu, or the specials, or what’s coming in from the farm for the day, people get very excited about that.”
