When it comes to barbecue in the Lone Star state, low-and-slow smoked beef is the cornerstone of the menu. For Black's BBQ in Lockhart, Texas, it's all about Certified Angus Beef ® brand brisket, ribs and homemade sausage.
"My grandfather always said, 'Your food might have been very good a month ago or a year ago, but how was it today?' Quality and consistency are so important to us," third-generation pitmaster Kent Black says.
That means starting with the best ingredients.
"We're barbecue people. We're not magicians," he says of those who try to cut corners with their beef.
It's a recipe for success for the Black family.
"I have adult sons in the business, and there are some fifth-generation grandkids," Black notes. "We've been here since 1932, and using the Certified Angus Beef ® brand since the early '80s." Today, the original Lockhart location has expanded to Austin, New Braunfels and San Marcos.
